Spring Salad with an Asian Flair

I'm a lover of healthy salad dressings. One of my favorites is the asian dressing sold at Purple Porch Co-op, our local health food store. But, at $8 a bottle, it's a special treat. I've been working on making my own asian dressing to enjoy on lettuce, pea shoot and radish salads. The radishes are so nice and mild in the spring, they are a perfect crunchy accompaniment to the sweet pea shoots. Top with more sesame seeds for a lovely presentation!

Asian-style Salad Dressing

1/2 cup orange juice
1/4 cup rice vinegar
1/4 cup oil (I use avocado oil)
1 Tablespoon toasted sesame oil
1 Tablespoons soy sauce (I use gluten free tamari)
1 Tablespoon maple syrup
2 teaspoons garlic, grated (can substitute powdered, but not as good)
2 teaspoons ginger, grated (can substitute powdered or ginger juice)
1 Tablespoon toasted sesame seeds

Mix and enjoy.
