Quick Pickles Radishes

I was so excited to get this recipe from my friend and Harvest Member, Becky. Although the majority of our family is not radish lovers, we are pickle lovers. This quick pickle is super easy and a great way to save excess spring radishes for later. Feel free to substitute some of the aromatics in this recipe - onion, green onion, garlic scapes, and green garlic will all work well.

Quick Pickled Radishes
• 1-2 bunches of radishes sliced
• 1/2 cup vinegar
• 1 chopped spring garlic bulb (or use 2 cloves of regular garlic)
• 1 1/2 tsp of salt
• 1 tsp of sugar
• 1 cup hot water
• 1/4 cup chopped onion
• mason jar

1) Combine vinegar, chopped spring garlic, chopped onion, salt, sugar, and hot water in pourable bowl to make pickling liquid.
2) Place sliced radishes in mason jar leaving a some space for liquid.
3) Pour the pickling liquid into the jar.
4) Screw on lid and let it sit on the counter for 1 hour.
5) Refrigerate in fridge for at least 1 hour and then enjoy!
They should be stored in the fridge and will last about 2 months!

These are great on sandwiches, salads, tacos, nachos, and burgers!
