Breakfast Salad!

Supposedly this is a new, hip thing. Although, honestly, I've been eating salad for breakfast for a long time. I made my breakfast salad with medium boiled eggs, pasture raised bacon, a simple vinaigrette and a sprinkle of everything-bagel-seasoning. I really should have added some microgreens - I'll do that next time.

Here is the vinaigrette I used:
1/4 cup olive oil
3 tablespoons apple cider vinegar
1 tablespoon dijon mustard
Shake or whiz with a blender until it comes together.
