Spring Mint Quinoa Salad

A fresh, vibrant salad packed with crisp radishes, tender spinach, nutty quinoa, and a refreshing drizzle of my homemade Spring Mint Dressing.

Ingredients

  • 2 cups fresh spinach (or your favorite salad greens)

  • ½ cup cooked quinoa, cooled

  • 4-5 radishes, thinly sliced

  • 1 green onion, sliced

  • Fresh mint leaves, for garnish

  • Your favorite amount of my Spring Mint Dressing

Instructions

  1. Prepare the quinoa: If not already cooked, rinse ¼ cup of quinoa and cook according to package instructions. Let cool.

  2. Assemble the salad: Arrange the spinach on a plate or in a bowl. Top with quinoa, sliced radishes, and green onions.

  3. Drizzle & serve: Pour on my Spring Mint Dressing, toss gently, and enjoy fresh!
