Maple Glazed Carrots with Dill

Here it is. The best recipe for cooked carrots. Beautiful enough for Thanksgiving, yet simple enough for every day. Our whole family loves these carrots, even my son who doesn’t much care for dill. The dill flavor is very mild, so feel free to add more dill if you like it. You can also substitute fresh parsley for the dill or just leave it off altogether. When I’m throwing together a quick dinner, I often forego the fresh herbs (especially if I have to walk out to the garden to harvest them), but for holidays or guests, the herbs make it special.

Maple Glazed Carrots

  • 3 Tablespoons olive oil

  • 3 Tablespoons butter

  • 6-8 carrots

  • 1/2 cup real maple syrup

  • 2 Tablespoons fresh dill (or other herbs)

  • freshly ground salt and pepper
